Ingredients
  

  • butternut squash
  • olive oil
  • fresh cilantro
  • onion and garlic
  • apple peeled
  • vegetable broth
  • ground cinnamon
  • ground nutmeg
  • heavy cream

Instructions
 

  • Peel the butternut squash, remove the seeds, and cut it into 1-inch cubes.
  • In a large soup pot, heat the olive oil over medium heat. Add the chopped onion, minced garlic, and chopped carrot. Sauté for about 5 minutes until the onion is translucent and the vegetables are slightly softened.
  • Add the cubed butternut squash and chopped apple to the pot. Sauté for another 5 minutes, stirring occasionally.
  • Sprinkle the ground cinnamon, ground nutmeg, salt, and pepper over the vegetables. Stir to coat the ingredients evenly.
  • Pour in the chicken or vegetable broth, ensuring that the vegetables are fully covered. Bring the mixture to a boil, then reduce the heat to low, cover the pot, and simmer for 20-25 minutes, or until the butternut squash is tender.
  • Using an immersion blender, carefully blend the soup until smooth and creamy right in the pot. Alternatively, allow the soup to cool slightly and blend it in batches using a countertop blender. Be cautious with hot liquids.
  • Return the blended soup to the pot if using a countertop blender. Stir in the heavy cream (or coconut milk for a vegan option) and heat the soup gently over low heat until warmed through.
  • Ladle the creamy butternut squash soup into bowls. Garnish with fresh parsley or chives, if desired.
