Ingredients
  

  • 2 cups fresh basil leaves packed
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup pine nuts or walnuts
  • 3 cloves garlic peeled
  • 1/2 cup olive oil extra-virgin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup grated Pecorino Romano cheese (optional, for extra flavor)

Instructions
 

  • Prepare the Ingredients:
    Wash and dry the fresh basil leaves. Grate the Parmesan cheese.
  • Toast the pine nuts or walnuts in a dry skillet over medium heat until lightly browned.

Combine Ingredients in the Food Processor:

  • Let them cool. In the bowl of your food processor, add the basil leaves, grated Parmesan, toasted pine nuts (or walnuts), and peeled garlic cloves.

Pulse and Blend:

  • Pulse the ingredients a few times to break them down. While the food processor is running, slowly pour in the extra-virgin olive oil through the feed tube until the mixture becomes a smooth paste.

Season and Add Optional Cheese:

  • Add salt and black pepper to the mixture and pulse to combine.

Taste and Adjust:

  • If you like a stronger, more savory flavor, add the grated Pecorino Romano cheese and pulse until incorporated.
  • Taste the pesto and adjust the salt, pepper, or cheese to your liking. Transfer the pesto to an airtight container.

Store or Serve:

  • It can be stored in the refrigerator for up to a week or frozen for longer storage.
