Instructions
Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners
- In a mixing bowl, whisk together the flour, cocoa powder, granulated sugar, baking powder, baking soda, and salt until well combined.
- In another bowl, whisk together the buttermilk, vegetable oil, egg, and vanilla extract until well blended.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix; and darling few lumps are okay.
- Gradually add the hot water to the batter and stir until the batter is smooth. The batter will be thin, but that's normal.
- Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
