Ingredients
  

  • all-purpose flour
  • baking soda
  • unsalted butter
  • softened white granulated sugar
  • large egg
  • vanilla extract
  • Pinch of salt

Instructions
 

  • In a mixing bowl, whisk together the all-purpose flour, baking soda, baking powder, and a pinch of salt. Set this dry ingredient mixture aside.
  • In another bowl, using an electric mixer or hand mixer, cream together the softened butter and granulated sugar until light and fluffy.
  • Add the egg, vanilla extract, and almond extract (if using) to the butter-sugar mixture. Beat until well combined.
  • Divide the dough in half and shape each half into a flat disk. Wrap them in plastic wrap and refrigerate for at least 1 hour.
  • Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper or silicone baking mats.
  • On a lightly floured surface, roll out one portion of the chilled dough to about 1/4 inch thickness. Use cookie cutters to cut out your desired shapes.
  • Place the cookies on the prepared baking sheets and bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
  • Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
  • Once cooled, you can decorate your sugar cookies with icing, sprinkles, or enjoy them plain.
