Instructions
- Rinse the sushi rice in cold water until the water runs clear. Drain well.In a saucepan, combine the rinsed rice and 1 1/4 cups of water. Bring it to a boil, then reduce the heat to low, cover, and simmer for 15 minutes.
- Remove the rice from heat and let it sit, covered, for another 10 minutes.
- While the rice is still warm, transfer it to a wooden or glass bowl. In a separate bowl, mix the rice vinegar, sugar, and salt until the sugar dissolves.
- Gently fold the vinegar mixture into the warm rice while using a wooden spoon or rice paddle to fan the rice. This cools the rice and helps it absorb the flavors.
- Slice your sushi-grade fish and any other desired fillings into thin strips.
- Place a bamboo sushi rolling mat (makisu) on a clean, flat surface. Lay a sheet of plastic wrap on top of the mat.Place a sheet of nori, shiny side down, onto the plastic wrap-covered mat.
- Wet your hands to prevent the rice from sticking. Take a handful of sushi rice and spread it evenly over the nori, leaving about 1 inch of nori without rice at the top.
- Add your desired fillings (e.g., fish, avocado, cucumber) on top of the rice.Roll up the sushi tightly using the bamboo mat, applying gentle pressure.
- Use a sharp knife dipped in water to slice the sushi roll into bite-sized pieces. Clean the knife between cuts to ensure clean edges.
- Arrange your sushi pieces on a plate. Serve with soy sauce for dipping and, if desired, wasabi and pickled ginger.
