Bean soup can be thick and hearty or lighter and brothy, depending on the recipe and regional variations. Ingredients

  • 1 cup dried beans (such as navy beans, pinto beans, or black beans)
  • 1 onion, chopped

  • 2 carrots, diced

  • 2 celery stalks, diced

  • 2 cloves garlic, minced

  • 6 cups vegetable or chicken broth

  • 1 bay leaf

  • 1 teaspoon dried thyme

  • Salt and pepper to taste

  • Olive oil for sautéing

Instructions

  • Start by rinsing and sorting the dried beans to remove any debris. You can soak the beans overnight, which can reduce cooking time, or you can use the quick soak method by boiling them for a few minutes and then letting them sit for an hour. Drain and rinse the beans.
  • In a large soup pot, heat a drizzle of olive oil over medium heat. Add the chopped onion, carrots, and celery. Sauté for about 5 minutes until they begin to soften. Add minced garlic and cook for another minute until fragrant.
  • Add the drained beans, vegetable or chicken broth, bay leaf, and dried thyme to the pot. Stir everything together.
  • Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for about 1.5 to 2 hours, or until the beans are tender. Stir occasionally and add more broth if needed to maintain your desired soup consistency.
  • Once the beans are tender, remove the bay leaf and season the soup with salt and pepper to taste. Adjust the seasoning to your preference.
  • Ladle the bean soup into bowls and serve hot. You can garnish with fresh herbs, a drizzle of olive oil, or a sprinkle of grated cheese if desired.
One can customize this recipe by adding ingredients like diced ham, bacon, or other vegetables to suit your taste. Enjoy your homemade bean soup!

Notes

When making bean soup it is important to soak the dried beans properly and, if desired, pre-boiling them. Soaking beans overnight or using the quick soak method helps to soften them and reduce cooking time. This step not only ensures that the beans cook evenly but also helps to eliminate compounds that can cause digestive discomfort in some individuals. Additionally, always follow the recipe's recommended cooking times and techniques for the specific type of beans you're using, as cooking times can vary between different varieties of beans.
