  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin

  • 1 teaspoon paprika

  • 2 bay leaves

  • Salt to taste

  • 6 cups water or chicken broth

  • 2 carrots, peeled and sliced

  • 2 medium potatoes, peeled and diced

  • 1 bell pepper, chopped

  • 1 cup chopped spinach or other leafy greens

  • Fresh cilantro, chopped (for garnish)

  • Optional: yam or plantains, peeled and sliced (for added thickness)

Instructions
 

  • In a large pot, heat some oil and sauté the chopped onion until translucent.
  • Add the chopped tomatoes, ginger paste, and garlic paste. Cook until the tomatoes soften.
  • Add the chicken pieces and brown them on all sides.
  • Stir in the cayenne pepper, coriander, cumin, paprika, bay leaves, and salt. Cook for a few minutes to release the flavors.
  • Pour in the water or chicken broth and bring the mixture to a boil. Reduce the heat to a simmer and let it cook for about 20-25 minutes, until the chicken is tender.
  • If using yam or plantains, add them to the pot and let them cook until tender.
  • Add the sliced carrots and diced potatoes. Simmer until the vegetables are cooked.
  • Finally, add the chopped bell pepper and spinach. Cook for an additional 5 minutes.
  • Taste and adjust the seasoning if necessary.
  • Remove the bay leaves before serving.
