Ingredients
  

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

  • 1 cup cornstarch

  • 2 eggs, beaten

  • Oil for frying

  • 1 cup orange juice

  • 1/2 cup orange zest

  • 1/4 cup soy sauce

  • 1/4 cup rice vinegar

  • 1/4 cup brown sugar

  • 1 teaspoon ginger, minced

  • 1 teaspoon garlic, minced

  • 1/2 teaspoon red pepper flakes (adjust to taste)

  • Green onions, sliced (for garnish)

Instructions
 

  • In a bowl, coat the chicken pieces with cornstarch, shaking off any excess. Dip them into the beaten eggs, allowing the excess to drip off.
  • Heat oil in a pan to about 350°F (175°C). Fry the coated chicken pieces in batches until they turn golden brown and crispy. Remove and drain on paper towels.
  • In a separate saucepan, combine orange juice, orange zest, soy sauce, rice vinegar, brown sugar, ginger, garlic, and red pepper flakes. Bring the mixture to a simmer, stirring to dissolve the sugar.
  • In a small bowl, mix 2 tablespoons of cornstarch with 2 tablespoons of water to create a slurry. Slowly add the slurry to the simmering sauce, stirring constantly until the sauce thickens.
  • Add the fried chicken pieces to the sauce, tossing to coat them evenly.
  • Serve the orange chicken over steamed rice and garnish with sliced green onions.
