Instructions
 

  • In a large bowl, combine the flour and salt. Add the cold butter cubes and use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.
  • Gradually add ice water, 1 tablespoon at a time, and mix until the dough just comes together. Divide the dough into two equal portions, shape each into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour.
  • In a large bowl, combine the sliced apples, sugar, cinnamon, nutmeg (if using), flour, and lemon juice. Gently toss to coat the apples evenly.
  • Preheat your oven to 425°F (220°C). On a floured surface, roll out one of the chilled dough disks to fit a 9-inch pie dish. Place the rolled-out dough in the pie dish.
  • Spoon the apple filling into the pie crust, making sure to distribute it evenly. Dot the filling with small pieces of butter.
  • Roll out the second chilled dough disk on a floured surface. You can either place the entire crust over the pie as a top layer or create a lattice pattern with strips of dough.
