  • Add the sliced potatoes to the skillet and cook, occasionally flipping them, until they are tender but not browned. This usually takes about 10-15 minutes.
  • Once the potatoes are cooked, use a slotted spoon to transfer them to a plate lined with paper towels to drain excess oil.
  • In the same skillet, sauté the thinly sliced onions until they are soft and translucent. Remove them from the skillet and set them aside.
  • In a large bowl, beat the eggs and season them with salt and pepper.
  • Gently mix the cooked potatoes and sautéed onions into the beaten eggs, ensuring they are well-coated.
  • Clean the skillet if necessary and add a tablespoon of olive oil. Heat the skillet over medium-low heat.
  • Pour the egg, potato, and onion mixture into the skillet, spreading it out evenly.
  • Cook the omelette slowly, allowing the bottom to set while the top is still slightly runny.
