Palmier (Elephant Ear) Pastry Recipe

Ingredients
  

  • puff pastry
  • granulated sugar

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • On a clean work surface, spread half of the granulated sugar. Optionally, add a sprinkle of cinnamon for extra flavor.
  • Roll out the puff pastry sheet on top of the sugar, pressing it gently to adhere the sugar to the pastry.
  • Spread the remaining sugar on top of the pastry sheet. Use a rolling pin to press the sugar into the dough slightly.
  • Start folding in the long sides of the pastry sheet, each side folding toward the center until they meet in the middle. Gently press the folded sides together.
  • Fold the pastry in half along the center where the sides meet, creating a double fold. Chill the folded pastry in the fridge for about 15-20 minutes to firm up.
  • Remove the chilled pastry and slice it into 1/2-inch thick slices. These slices will be your Palmiers.
  • Line a baking sheet with parchment paper. Place the Palmier slices on the sheet, leaving some space between them as they will puff up during baking. Optionally, lightly brush the tops with a bit of water to encourage caramelization.
  • Bake in the preheated oven for 12-15 minutes or until the pastry is golden brown and caramelized. Keep an eye on them to prevent over-browning.
  • Once baked, transfer the Palmiers to a wire rack to cool. The sugar on the outside will harden as they cool.
  • Serve the Palmiers once they are completely cooled, and enjoy their delightful crunch and sweetness.
