Ingredients
  

  • olive oil
  • carrot
  • onion
  • celery stalks
  • garlic
  • chicken broth
  • chicken
  • bay leaf
  • dried thyme
  • egg noodles
  • salt and black pepper
  • parsley

Instructions
 

  • In a large pot, heat olive oil over medium heat.
  • Add diced onion, sliced carrots, and sliced celery to the pot. Sauté until the vegetables start to soften, about 5 minutes.
  • Stir in minced garlic and cook for an additional 30 seconds until fragrant.
  • Pour in chicken broth and bring the mixture to a gentle simmer.
  • Add cooked chicken, bay leaves, dried thyme, salt, and black pepper to the pot. Stir to combine.
  • Add egg noodles to the simmering broth. Cook according to the package instructions until the noodles are tender.
  • Once the noodles are cooked, remove and discard the bay leaves.
  • Taste the soup and adjust the seasoning with more salt and pepper if needed.
  • Ladle the hot and comforting chicken noodle soup into bowls. Garnish with chopped fresh parsley for a burst of color and flavor.
