Ingredients
- peanut butter
- vanilla extract
- powdered sugar
- salt
- chocolate chips
- coconut oil
Instructions
- In a mixing bowl, combine creamy peanut butter, powdered sugar, vanilla extract, and a pinch of salt. Mix until all the ingredients are well combined. Set aside.
- Melt the semi-sweet chocolate chips and coconut oil (or vegetable shortening) together using a double boiler or in the microwave. If using the microwave, heat in 20-second intervals, stirring after each interval until the chocolate is smooth and fully melted.
- Line a mini muffin tin or silicone mold with mini muffin liners. Spoon a small amount of melted chocolate into each liner, ensuring the bottom is covered.
- Take a small amount (about 1 teaspoon) of the peanut butter filling and flatten it slightly. Place it on top of the chocolate layer in each liner.
- Spoon more melted chocolate over the peanut butter filling, ensuring it's completely covered.
- Gently tap the muffin tin or mold on the counter to even out the chocolate layer on top.
- Place the muffin tin or mold in the refrigerator for about 30 minutes, or until the chocolate is fully set.
- Once the peanut butter cups are set, carefully remove them from the liners. They are now ready to be enjoyed!
