Ingredients
  

  • habanero pepper
  • onion
  • water
  • garlic
  • white vinegar
  • lime
  • salt and sugar

Instructions
 

  • Wear gloves while handling the habanero peppers. Remove the stems and roughly chop the peppers. Peel and chop the garlic cloves, and chop the onion.
  • In a pan, sauté the chopped onions and garlic until soft and slightly caramelized. This mellows their flavors and reduces the raw taste.
  • Combine sautéed onions, garlic, habanero peppers, vinegar, lime juice, salt, and sugar (if using) in a blender or food processor. Blend until smooth.
  • Taste the sauce and adjust seasoning as desired. Add more salt, sugar, or lime juice if needed.
  • For a smoother texture, strain the mixture through a fine mesh strainer to remove solids.
  • Carefully pour the hot sauce into clean, sterilized glass bottles or jars, leaving space at the top. Seal tightly.
  • Let the sauce cool to room temperature before refrigerating. Allow flavors to develop over a few days. Store in the refrigerator for several months.
  • Use sparingly due to habanero's intense heat. Add a few drops to dishes for a spicy kick.
