  • 1 can (14 oz) diced tomatoes (or fresh tomatoes)

  • 6 cups vegetable or chicken broth

  • 1 teaspoon ground cumin

  • 1 teaspoon ground coriander

  • 1/2 teaspoon turmeric (optional)

  • 1 bay leaf

  • Salt and pepper to taste

  • 2 tablespoons olive oil

  • Fresh lemon juice (optional, for serving)

  • Chopped fresh parsley or cilantro (for garnish)

Instructions
 

  • In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrots, and celery. Cook for about 5-7 minutes until the vegetables start to soften.
  • Add the minced garlic, cumin, coriander, and turmeric (if using). Cook for another minute until fragrant.
  • Add the rinsed lentils, diced tomatoes, bay leaf, and broth to the pot. Bring the mixture to a boil.
