  • bamboo sushi rolling mat
  • plastic wrap
  • sharp knife

Ingredients
  

  • sushi rice
  • nori
  • avocado
  • crab meat
  • cucumber
  • soy sauce
  • wasabi or pickled ginger

Instructions
 

  • Have all the ingredients ready and within easy reach before assembling the rolls.
  • Place a bamboo sushi rolling mat on a clean surface. Cover it with plastic wrap to prevent the rice from sticking.
  • Lay a sheet of nori on the plastic-covered mat with the shiny side facing down.
  • Moisten your hands with water to prevent sticking. Take a handful of sushi rice and gently spread it evenly over the nori, leaving about half an inch of nori exposed at the top edge.
  • Arrange slices of avocado, crab meat, and julienned cucumber along the center of the rice.
  • Carefully lift the edge of the bamboo mat closest to you and start rolling the nori and rice over the fillings, using your fingers to hold the fillings in place. Roll tightly but gently, using the mat to shape the roll.
  • Moisten the exposed edge of nori with water to help seal the roll. Continue rolling until the entire roll is sealed.
  • Use a sharp knife dipped in water to slice the roll into bite-sized pieces. Clean the knife between cuts for neat slices.
  • Arrange the California Roll slices on a plate. Serve with soy sauce for dipping, and optionally with wasabi and pickled ginger on the side.
