- potatoes
- onions

Instructions
- Heat oil in a large pot or skillet over medium heat. Add mustard seeds and cumin seeds. When they splutter, add asafoetida (if using), and curry leaves (if available). Sauté for a few seconds.
- Add the chopped onion and sauté until it becomes translucent. Stir in minced garlic and grated ginger. Sauté for another minute.
- Add chopped tomatoes to the pot and cook until they soften and release their juices. Stir in turmeric powder, cumin powder, coriander powder, and red chili powder. Cook the spices until they are fragrant and well combined.
- Add the cubed potatoes to the pot and mix well with the tomato-spice mixture. Coat the potatoes with the spices.
- Lower the heat to medium-low. Cover the pot and let the potatoes cook for about 15-20 minutes, stirring occasionally. If needed, add a splash of water to prevent sticking.
- Once the potatoes are almost cooked, add slit green chilies and garam masala. Mix well and continue to cook for another 5 minutes, allowing the flavors to meld.
- Taste the curry and adjust salt and spices according to your preference.
- Once the potatoes are tender and coated with the flavorful curry, remove the pot from heat. Garnish with freshly chopped cilantro for a burst of freshness.
