Ingredients
  

  • all purpose lour
  • garnulated sugar
  • baking powder
  • salt
  • baking soda
  • buttermilk
  • egg
  • melted butter
  • vanilla extract

Instructions
 

  • In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
  • In a separate bowl, whisk together the buttermilk (or milk), egg, melted butter, and vanilla extract (if using).
  • Pour the wet ingredients into the dry ingredients. Gently mix until just combined. Don't overmix; a few lumps are okay. The batter should be thick but pourable.
  • Place a non-stick skillet or griddle over medium heat. Lightly grease the cooking surface with a small amount of melted butter.
  • Ladle about 1/4 cup of the batter onto the preheated skillet for each pancake. Use the back of the ladle to spread the batter into a circular shape.
  • Cook the pancakes for about 2-3 minutes, or until you see bubbles forming on the surface. This indicates that the bottom is cooked and ready to flip.
  • Carefully flip the pancakes with a spatula and cook for an additional 1-2 minutes, or until the other side is golden brown
  • As each pancake is cooked, transfer it to a plate and cover with a clean kitchen towel to keep them warm while you finish cooking the batch.
  • Serve the pancakes warm with your favorite toppings, such as maple syrup, fresh berries, sliced bananas, or a dollop of whipped cream.

Notes

  • If you don't have buttermilk, you can make your own by adding 1 tablespoon of vinegar or lemon juice to 3/4 cup of milk. Let it sit for a few minutes before using.
  • For extra fluffy pancakes, avoid overmixing the batter. A few lumps are perfectly fine.
  • Adjust the pancake size according to your preference. Smaller portions will yield more pancakes.
