Equipment

  • mixing bowl
  • rolling pin
  • baking sheet
  • oven

Ingredients

  • dry yeast
  • granulated sugar
  • warm water
  • all purpose flour
  • salt
  • olive oil

Instructions

  • In a small bowl, combine the warm water, sugar, and active dry yeast. Stir gently and let it sit for about 5-10 minutes, or until the mixture becomes frothy and bubbles form on the surface.
  • In a mixing bowl, combine the flour and salt. Make a well in the center and pour in the activated yeast mixture along with the olive oil.
  • Mix the ingredients together until a dough forms. Turn the dough out onto a floured surface and knead for about 5-7 minutes, or until the dough is smooth and elastic.
  • Place the dough in a lightly greased bowl and cover it with a clean kitchen towel or plastic wrap. Let the dough rise in a warm, draft-free place for 1-2 hours, or until it has doubled in size.
  • Preheat your oven to 475°F (245°C). If you have a baking stone or baking steel, place it in the oven to preheat as well.
  • Punch down the risen dough to deflate it. Turn it out onto a floured surface and divide it into equal-sized portions (usually around 8 pieces).Roll each portion into a ball and then flatten it with a rolling pin into a round disc, about 1/4 inch thick.
  • Carefully transfer the flattened dough discs onto a baking sheet or directly onto the preheated baking stone or steel in the oven.Bake for about 5-7 minutes, or until the pita rounds have puffed up and turned golden brown.
  • Remove the baked pita bread from the oven and let them cool on a wire rack.Once cooled, use a knife to gently split open the pita rounds to create pockets.
  • Fill the pita pockets with your favorite fillings, such as falafel, hummus, veggies, or grilled meats, and enjoy your homemade pita sandwiches or wraps.

Notes

  • Ensure the water used to activate the yeast is at the right temperature. Too hot or too cold water can affect the yeast's activity.
  • The initial high oven temperature helps the pita puff up and develop the characteristic pocket.
  • You can brush the baked pita bread with olive oil for a glossy finish.
