Ingredients
  

  • pork belly
  • salt
  • black pepper
  • garlic powder
  • spice powder

Instructions
 

  • Pat the pork belly dry with paper towels. Use a sharp knife to score the skin side of the pork belly with diagonal lines, about 1/2 inch apart. Make sure to cut through the skin and into the fat, but not into the meat.
  • In a mixing bowl, combine the salt, black pepper, garlic powder, and five-spice powder (if using).
  • Rub the spice mixture all over the pork belly, including the sides and the skin. Make sure to massage the spices into the scored skin.
  • Place the pork belly on a plate and let it air-dry in the refrigerator, uncovered, for at least 2 hours or overnight. This helps the skin to dry out, resulting in crispy crackling.
  • Preheat your oven to 300°F (150°C).
  • Place a wire rack on a baking tray. This allows air to circulate around the pork and helps achieve even crisping.
  • Rub the skin with vegetable oil, focusing on getting the oil into the scored lines.Place the pork belly on the wire rack, skin side up.
  • Roast the pork belly in the preheated oven for approximately 2 hours. The slow cooking renders the fat and makes the meat tender.
  • Increase the oven temperature to 450°F (230°C) or use the broiler setting.Keep a close eye on the pork as the skin crisps up. This should take about 10-15 minutes.
  • The skin should blister and become crispy, resembling crackling. If needed, rotate the pork for even crisping.
  • Remove the pork belly from the oven and let it rest for about 10 minutes before slicing.Cut the pork belly into serving portions
  • Arrange the crispy pork belly on a serving platter and garnish with fresh herbs if desired.This dish pairs well with a side of steamed rice, vegetables, or a zesty salad.
