Equipment
- flan moulds
- mixing bowl
- baking dish
- whisk
- fine mesh strainer
Ingredients
- granulated sugar
- eggs
- condensed milk
- evaporated milk
- vanilla extract
- salt
Instructions
- In a saucepan over medium heat, melt the granulated sugar. Allow it to caramelize and turn a deep amber color. Swirl the pan occasionally to ensure even melting.
- Carefully pour the caramel into the bottoms of flan molds or ramekins. Tilt the molds to coat the bottom evenly with caramel. Set aside to cool and harden
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, whisk together the eggs until well beaten.Add the sweetened condensed milk, evaporated milk, vanilla extract, and a pinch of salt. Whisk until the mixture is smooth and well combined.
- For an extra smooth texture, strain the mixture through a fine mesh strainer into another bowl.
- Carefully pour the flan mixture into the prepared molds over the cooled caramel. Leave a small space at the top to prevent overflowing during baking.
- Place the filled flan molds in a baking dish.Fill the baking dish with hot water, about halfway up the sides of the molds. This creates a gentle and even cooking environment for the flan.
- Carefully transfer the baking dish to the preheated oven and bake for approximately 40-45 minutes, or until the flan is set around the edges but still slightly jiggly in the center.
- Remove the flan molds from the water bath and allow them to cool to room temperature.Once cooled, cover the molds with plastic wrap and refrigerate for at least 3 hours, or preferably overnight. Chilling allows the flavors to meld and the flan to fully set.
- To serve, run a knife around the edges of each flan to loosen it.Place a serving plate over the top of the mold and quickly invert it to release the flan onto the plate. The caramel sauce will drizzle over the top.
- Serve the Creamy Caramel Flan as a delightful ending to any meal.

Notes

- For a twist, you can add a touch of espresso or a hint of cinnamon to the flan mixture.
- Straining the mixture helps remove any possible bits of cooked egg and results in a smoother texture.
