- salt and black pepper
- all purpose flour
- vegetableoil
- onion

- beef broth
- red wine
- bay leaf
- dried thyme
- rosemary
- carrot
- potato
- celery stalk

Instructions
- Season the beef stew meat with salt and black pepper.Dredge the seasoned beef in flour, shaking off any excess.
- In a Dutch oven or large pot, heat the vegetable oil over medium-high heat
- Add the floured beef pieces and brown them on all sides. Work in batches if needed to avoid crowding the pot.Once browned, remove the beef from the pot and set it aside.
- In the same pot, add the chopped onion and sauté until it becomes translucent.Add the minced garlic and sauté for another 1-2 minutes until fragrant.
- If using red wine, pour it into the pot to deglaze, scraping up any browned bits from the bottom.Add the beef broth, bay leaves, dried thyme, and dried rosemary. Stir to combine.
- Return the browned beef to the pot, along with any juices that have accumulated.
- Cover the pot with a lid and reduce the heat to low. Allow the stew to simmer for about 1.5 to 2 hours, or until the beef becomes tender.
- Add the sliced carrots, cubed potatoes, and chopped celery to the stew. Continue to simmer for another 20-30 minutes, or until the vegetables are cooked to your desired level of tenderness.
- Add the frozen peas to the stew during the last 5 minutes of cooking
- Taste the stew and adjust the seasoning with salt and black pepper if needed, discard the bay leaves,and garnish the stew with chopped fresh parsley just before serving.
