Ingredients
  

  • 4 beef short ribs

  • Salt and pepper to taste

  • 2 tablespoons vegetable oil

  • 1 onion, chopped

  • 2 carrots, chopped

  • 2 celery stalks, chopped

  • 4 cloves garlic, minced

  • 2 cups beef broth

  • 1 cup red wine

  • 2 sprigs fresh thyme

  • 2 bay leaves

Instructions
 

  • Preheat your oven to 325°F (165°C).
  • Season the beef short ribs with salt and pepper.
  • Heat the vegetable oil in a large, oven-safe pot over medium-high heat. Brown the short ribs on all sides, about 3-4 minutes per side. Remove the ribs and set them aside.
  • In the same pot, add the chopped onion, carrots, and celery. Sauté for about 5 minutes until the vegetables start to soften.
  • Add the minced garlic and cook for another 1-2 minutes.
  • Pour in the beef broth and red wine, and stir to combine.
  • Return the browned short ribs to the pot. Add the fresh thyme and bay leaves.
  • Bring the liquid to a simmer, then cover the pot with a lid.
  • Transfer the pot to the preheated oven and braise for about 2.5 to 3 hours, or until the meat is tender and easily pulls away from the bone.
  • Once done, remove the pot from the oven. Carefully remove the short ribs from the pot and set them aside.
  • Skim any excess fat from the cooking liquid and strain it to create a rich sauce.
  • Serve the braised short ribs over mashed potatoes, creamy polenta, or your preferred side dish. Drizzle the sauce over the ribs and enjoy!
