- firm tofu
- soy sauce

Instructions
- In a mixing bowl, toss the cubed tofu with soy sauce or tamari until well coated.Sprinkle cornstarch over the tofu and gently toss to coat each cube evenly.
- Heat 1 tablespoon of vegetable oil in a wok or large skillet over medium-high heat.
- Add the coated tofu cubes and cook until they are golden and crispy on all sides. Remove the tofu from the wok and set aside.
- In the same wok, add the remaining 1 tablespoon of oil.Sauté minced garlic and ginger until fragrant.
- Add sliced bell peppers, julienned carrot, broccoli florets, snap peas, and mushrooms. Stir-fry for a few minutes until the vegetables are tender-crisp
- In a small bowl, whisk together hoisin sauce, sesame oil, and rice vinegar.
- Return the seared tofu to the wok with the sautéed vegetables.Pour the prepared sauce over the tofu and veggies. Toss to coat everything evenly and heat through.
