My favorite and delicious fish linguine

Fish linguine is a delectable pasta dish that combines linguine, a type of pasta resembling flattened spaghetti, with pieces of fish as the main protein. The fish is typically cooked to perfection and then gently tossed with the cooked linguine. This dish often features a flavorful sauce made from ingredients such as fresh herbs, garlic, olive oil, white wine, tomatoes, and sometimes cream. The result is a harmonious blend of seafood and pasta, creating a balanced and delicious meal that showcases the delicate flavors of both the fish and the linguine.

Ingredients

  • 8 ounces linguine pasta

  • 1 lb white fish fillets (such as cod, haddock, or tilapia), cut into bite-sized pieces

  • 2 tablespoons olive oil

  • 2 cloves garlic, minced

  • 1/2 cup cherry tomatoes, halved

  • 1/4 cup white wine

  • 1/4 cup chicken or vegetable broth

  • Juice of 1 lemon

  • 2 tablespoons fresh parsley, chopped

  • Salt and pepper to taste

  • Red pepper flakes (optional, for added heat)

Instructions

  • Cook the linguine pasta according to the package instructions until al dente. Drain and set aside.
  • In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  • Add the fish pieces to the skillet and cook for 2-3 minutes per side, or until they are opaque and easily flake with a fork. Remove the fish from the skillet and set aside.
  • In the same skillet, add the halved cherry tomatoes and cook for about 2 minutes until they start to soften.
  • Pour in the white wine and chicken or vegetable broth. Bring the mixture to a simmer and let it cook for another 2-3 minutes to reduce slightly.
  • Return the cooked fish to the skillet. Add the lemon juice, chopped parsley, salt, pepper, and red pepper flakes (if using). Gently stir to combine and heat everything through.
  • Add the cooked linguine to the skillet and toss to coat the pasta with the sauce and distribute the fish evenly.
  • Once everything is heated through, remove from heat.
  • Serve the fish linguine in individual plates or bowls, garnished with extra chopped parsley and a drizzle of olive oil if desired.

Notes

When making fish linguine, here are three important things to keep in mind:
Choice of Fish: Select a firm and mild-flavored white fish, such as cod, haddock, or tilapia. These types of fish hold up well when cooked and won't fall apart easily in the dish.
Cooking Time: Be cautious not to overcook the fish. Fish cooks quickly, usually within a few minutes, depending on the thickness of the fillets. Overcooking can lead to a dry and rubbery texture. Remove the fish from the heat as soon as it becomes opaque and flakes easily with a fork.
Balancing Flavors: The sauce plays a crucial role in enhancing the overall taste of the dish. Make sure to balance the flavors of the sauce by adjusting the amount of lemon juice, salt, and other seasonings according to your preference. Taste as you go to ensure that the flavors complement each other harmoniously.
By paying attention to these aspects, you'll create a delectable fish linguine dish that's perfectly cooked and bursting with delightful flavors.
