Equipment
- rolling pin
- muffin tin
- sauce pan
- whisk
- fine mesh sieve
- kitchen blowtorch
Ingredients
- puff pastry
- whole milk
- granulated sugar
- all purpose flour
- egg yolks
- vanilla extract
- cinnamon sticks
- lemon zest
- pinch of salt
Instructions
- In a saucepan, combine the milk, sugar, cinnamon stick, lemon zest, and salt. Bring the mixture to a gentle simmer over medium heat, stirring occasionally to dissolve the sugar.
- In a separate bowl, whisk together the egg yolks and all-purpose flour until smooth and well combined.
- Gradually pour a small amount of the hot milk mixture into the egg yolk mixture, stirring continuously to temper the eggs. This prevents the eggs from curdling when added to the hot milk.
- Slowly pour the tempered egg yolk mixture back into the saucepan with the remaining milk mixture. Cook over medium heat, stirring constantly, until the custard thickens and reaches a pudding-like consistency. Remove the cinnamon stick and discard.
- Remove the custard from the heat and stir in the vanilla extract. Let the custard cool slightly.
- Preheat your oven to 375°F (190°C).
- Roll out the puff pastry (if using homemade, roll it into thin sheets) on a floured surface to ensure it's large enough to cut circles that will fit your muffin tin or tart pans.
- Cut out circles of puff pastry and gently press them into the muffin tin or tart pans, creating a well for the custard.
- Pour the slightly cooled custard into the pastry shells, filling them almost to the top.
- Place the muffin tin or tart pans in the preheated oven and bake for about 20-25 minutes or until the pastry is golden and the custard has a slight jiggle in the center.
- Remove the tarts from the oven and let them cool in the tin or pans for a few minutes before transferring them to a wire rack to cool completely.
- Serve the Portuguese Custard Tarts warm or at room temperature, dusted with a sprinkle of cinnamon if desired.

Notes
- Portuguese Custard Tarts are best served on the day they are made, but they can be stored in an airtight container at room temperature for a day or two. Reheat them briefly in the oven before serving if desired.
- Using store-bought puff pastry saves time, but you can also make your own homemade puff pastry for an extra special touch.
