Ingredients
  

  • all purpose flour
  • milk
  • unsalted butter
  • granulated sugar
  • active dry yeast
  • salt
  • cornmeal

Instructions
 

  • In a small bowl, warm the milk to around 110°F (43°C). Sprinkle the active dry yeast and a pinch of sugar over the milk. Let it sit for about 5-10 minutes until the yeast becomes frothy and activated.
  • In a large mixing bowl, combine the flour, melted butter, granulated sugar, and salt.Pour in the activated yeast mixture and mix until a soft and sticky dough forms.
  • Transfer the dough to a floured surface and knead it for about 5 minutes until it becomes smooth and elastic. If using an electric mixer, knead the dough using the dough hook attachment for the same amount of time.
  • Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1 to 1.5 hours or until it doubles in size.
  • Once the dough has risen, gently deflate it and transfer it to a floured surface.Roll out the dough to a thickness of about 1/2 inch.
  • Use a round cookie cutter or drinking glass to cut out muffin rounds, re-rolling the dough scraps as needed.
  • Sprinkle cornmeal on a baking sheet or tray and place the muffin rounds on it, leaving some space between each.
  • Dust the tops of the muffins with additional cornmeal and cover them with a kitchen towel.Let the muffins rise for about 30 minutes.
  • Heat a non-stick griddle or skillet over medium-low heat.Carefully transfer the risen muffins to the preheated griddle and cook for about 7-10 minutes on each side until they are golden brown and cooked through.
  • Once cooked, transfer the English Muffins to a wire rack to cool.Slice them open, toast them, and enjoy with your favorite toppings or as part of a delicious breakfast or snack.
