Fondant potatoes, also known as pommes fondant in French, are a classic and elegant side dish made with whole potatoes that are seared until golden and then simmered in butter and stock until tender and flavorful. The cooking method results in a crispy, caramelized exterior and a soft, creamy interior. Ingredients

  • 4 large russet potatoes (or any starchy variety)

  • 4 tablespoons unsalted butter

  • 1 cup chicken or vegetable stock (or broth)

  • 2-3 garlic cloves, crushed or minced

  • A few sprigs of fresh thyme or rosemary (optional)

  • Salt and pepper to taste

Instructions

  • Peel the potatoes and cut off the rounded edges to create flat surfaces on the top and bottom. You can also leave the skin on if you prefer.
  • Slice each potato horizontally into rounds, about 1.5 inches thick.
  • In a large, heavy-bottomed skillet or frying pan, melt the butter over medium-high heat. Add the potatoes to the pan in a single layer.
  • Sear the potatoes on both sides until they turn golden brown, about 3-4 minutes per side.
  • Add crushed or minced garlic and the fresh thyme or rosemary (if using) to the pan. Gently stir them around the potatoes to infuse the flavors.
  • Pour in the chicken or vegetable stock, which should cover the potatoes about halfway. Be cautious, as the liquid might sizzle when added.
  • Reduce the heat to low, cover the pan, and let the potatoes simmer for about 15-20 minutes, or until they are tender and cooked through. Occasionally spoon the stock over the potatoes during this time to keep them moist.
  • Once the potatoes are fully cooked and the stock has reduced, uncover the pan and let any remaining liquid evaporate.
  • Season the Fondant Potatoes with salt and pepper to taste.
  • Serve the Fondant Potatoes warm as a delicious and elegant side dish.
Enjoy the rich, buttery flavors and delightful texture of Fondant Potatoes that pair wonderfully with a variety of main courses!

Notes

Fondant potatoes offer several benefits, both in terms of taste and nutrition. Here are four advantages of enjoying Fondant Potatoes:
1. Delicious Flavor: Fondant potatoes have a rich, buttery taste with a crispy exterior and a tender, creamy interior. The cooking process enhances the natural flavor of the potatoes, making them a delightful and sophisticated side dish.
2. Versatility: Fondant potatoes complement a wide range of main courses, from roasted meats to grilled fish and vegetarian dishes. They add a touch of elegance to any meal and can be served for both casual and formal gatherings.
3. Source of Nutrients: Potatoes are a good source of essential nutrients such as potassium, vitamin C, and vitamin B6. By leaving the skin on, you can maximize the nutritional benefits, as the skin contains additional fiber and other nutrients.
4. Cooking Technique: The cooking method of searing and simmering the potatoes in butter and stock allows them to absorb the flavors, creating a mouthwatering taste that makes them stand out from traditional potato preparations.
Remember to enjoy Fondant potatoes in moderation, as they are typically prepared with butter and can be higher in calories and fat. As part of a balanced diet, they can be a delightful treat that adds a touch of elegance and satisfaction to your dining experience.
