Ingredients
  

  • all purpose flour
  • suet
  • raisins
  • sugar
  • salt
  • baking powder
  • spice
  • milk
  • egg
  • cooking spray
  • custard sauce

Instructions
 

  • Grease a 1.5-quart pudding basin or a heatproof bowl with butter or non-stick cooking spray.
  • In a large mixing bowl, combine the all-purpose flour, finely shredded suet, sugar, dried currants or raisins, salt, baking powder, and mixed spice.Stir the dry ingredients until they are well combined.
  • In a separate bowl, whisk together the milk and beaten egg.Gradually pour the milk and egg mixture into the dry ingredients, stirring continuously to form a smooth and thick batter.
  • Transfer the Spotted Dick batter into the greased pudding basin, ensuring it is evenly distributed.
  • Cover the pudding basin with a double layer of aluminum foil or greaseproof paper, securing it tightly with a string or a rubber band.Place the pudding basin in a steamer or large saucepan with a steaming rack.
  • Pour enough boiling water into the steamer or saucepan to reach about halfway up the sides of the pudding basin.Cover the steamer or saucepan with a lid and steam the Spotted Dick over medium-low heat for 1 hour and 30 minutes. Make sure to check the water level occasionally and top up with boiling water if needed.
  • Carefully remove the steamed Spotted Dick from the pudding basin.
  • Serve the pudding warm, cut into slices, and accompanied by sweet custard sauce or a scoop of vanilla ice cream.

  • If you don't have a steamer, you can use a large saucepan with a steaming rack. Place a heatproof saucer or small dish at the bottom of the saucepan to elevate the pudding basin above the water level.
