  • 2 tablespoons tamarind paste

  • 3 tablespoons fish sauce

  • 2 tablespoons sugar

  • 1/2 teaspoon chili flakes (adjust to taste)

  • 1 cup bean sprouts

  • 1/4 cup chopped green onions

  • 1/4 cup crushed peanuts

  • Lime wedges, for serving

Instructions
 

  • Prepare the rice noodles according to the package instructions. Drain and set aside.
  • In a wok or large pan, heat the vegetable oil over medium-high heat. Add minced garlic and stir-fry for about 30 seconds until fragrant.
  • Push the garlic to one side of the wok and add the cubed tofu and shrimp (or chicken). Cook until the shrimp turn pink or the chicken is cooked through.
  • Push the tofu and shrimp to one side of the wok, and pour the beaten eggs into the other side. Scramble the eggs until they are just cooked.
  • Mix everything together in the wok, then add tamarind paste, fish sauce, sugar, and chili flakes. Toss well to coat all the ingredients evenly.
  • Add the cooked rice noodles to the wok and gently stir-fry with the sauce and ingredients until everything is well combined.
  • Toss in the bean sprouts and chopped green onions, and cook for an additional minute.
  • Serve hot, garnished with crushed peanuts and lime wedges on the side.
