Ingredients
  

  • eggs
  • cheese
  • milk
  • cooked bacon
  • bell pepper
  • fresh spinach
  • salt and pepper
  • butter

Instructions
 

  • Preheat your oven to 375°F (190°C). Grease a standard 6-cup muffin tin with cooking spray or butter.
  • In a mixing bowl, whisk together the eggs and milk until well combined. Season the mixture with salt and pepper to taste.
  • Add grated cheese, diced ham or bacon (if using), diced bell peppers, and chopped spinach or kale to the egg mixture.Stir everything together until the fillings are evenly distributed.
  • Using a ladle or large spoon, carefully pour the egg mixture into the greased muffin tin, dividing it evenly among the 6 cups.
  • Place the muffin tin in the preheated oven and bake for 15-20 minutes, or until the egg muffins are set and slightly golden on top.
  • Once baked, remove the egg muffins from the oven and let them cool in the muffin tin for a few minutes.
  • Use a butter knife to gently loosen the edges of the muffins and remove them from the tin.Serve the egg muffins warm or at room temperature as a delightful breakfast or snack option.
