Ingredients
  

  • cauliflower
  • garlic
  • olive oil
  • salt and pepper
  • milk
  • fresh chives

  • Fill a large pot with about an inch of water and place a steamer basket inside.Add the cauliflower florets to the steamer basket and cover the pot with a lid.
  • Steam the cauliflower over medium-high heat for about 10-12 minutes or until the florets are tender when pierced with a fork.
  • Once the cauliflower is cooked, remove the steamer basket from the pot and drain any excess water from the cauliflower.
  • Transfer the steamed cauliflower to a large bowl or the bowl of a food processor.Add minced garlic, butter or olive oil, and a splash of milk or vegetable broth to the cauliflower.
  • If using a food processor, process the cauliflower mixture until it reaches your desired smoothness. If you prefer a rustic texture, use a potato masher and mash the cauliflower until creamy.
  • Season the mashed cauliflower with salt and pepper to taste. Adjust the amount of butter, milk, or broth to achieve your desired consistency.
