Instructions
 

  • Preheat your oven to 180°C (350°F).
  • For the pastry crust, in a large mixing bowl, combine the all-purpose flour, cubed cold butter, and sugar. Use your fingers or a pastry cutter to blend the mixture until it resembles coarse crumbs.
  • Add the beaten egg and cold water to the mixture. Mix until the dough comes together. If the dough is too dry, add a little more cold water, a teaspoon at a time.
  • Form the dough into a ball, cover it with plastic wrap, and refrigerate for about 30 minutes to allow it to rest.
  • While the dough is chilling, prepare the pumpkin filling. In a separate bowl, whisk together the mashed pumpkin, granulated sugar, evaporated milk or cream, beaten eggs, ground cinnamon, ground nutmeg, ground ginger, and a pinch of salt. Mix until well combined and smooth.
