Ingredients
  

  • full fat milk powder
  • ghee
  • granulated sugar
  • heavy cream
  • cardamom
  • saffron threads
  • chopped nuts

Instructions
 

  • Grease a square or rectangular baking dish with a little ghee and set it aside
  • In a non-stick pan or heavy-bottomed saucepan, melt the ghee over low heat.Add the milk powder to the pan and stir continuously to combine it with the ghee. The mixture will resemble coarse crumbs.
  • Pour the heavy cream into the pan with the milk powder and ghee mixture.Stir well to combine, making sure there are no lumps.
  • Add the granulated sugar and continue stirring until the sugar dissolves.
  • Add the ground cardamom to the mixture, giving it a warm and aromatic touch.If using saffron, soak a pinch of saffron threads in a teaspoon of warm milk for a few minutes. Add the saffron-infused milk to the mixture for a golden hue and a hint of saffron flavor.
  • Continue cooking the mixture over medium-low heat, stirring constantly to prevent sticking or burning.
  • The mixture will thicken and start to pull away from the sides of the pan, forming a smooth and cohesive mass. This will take approximately 15-20 minutes.
  • Once the mixture reaches a fudge-like consistency, remove the pan from the heat.Quickly transfer the hot Burfee mixture to the greased baking dish, spreading it out evenly with a spoon or spatula.
  • While the Burfee is still warm, garnish it with chopped nuts of your choice, pressing them gently into the surface.
  • Allow the Burfee to cool and set in the baking dish for approximately 2-3 hours.
  • Once the Burfee has cooled and solidified, cut it into desired shapes (squares or diamonds).Serve this irresistible Indian sweet and delight in the richness of flavors.
