How to prepare Boeber

Boeber is a traditional South African dessert, particularly popular in the Cape Malay community. It is a sweet and creamy milk-based drink or porridge infused with aromatic spices and enriched with sago pearls (tapioca pearls) and vermicelli noodles. Boeber is often enjoyed during the holy month of Ramadan, as well as on special occasions and celebrations.
The key ingredients in Boeber typically include milk, sugar, sago pearls, vermicelli noodles, and a blend of spices such as cinnamon, cardamom, and nutmeg. Some variations may also include rose water or almond essence for added fragrance.

Ingredients
  

  • 1 liter full-cream milk

  • 1/2 cup vermicelli noodles

  • 1/4 cup sago pearls (tapioca pearls)

  • 1/2 cup sugar (adjust to taste)

  • 4-5 cardamom pods, lightly crushed

  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon rose water or 1/2 teaspoon almond essence (optional)

  • 2 tablespoons butter or ghee (clarified butter)

  • A handful of slivered almonds and/or pistachios for garnish (optional)

Instructions
 

  • In a medium-sized pot, bring the milk to a gentle simmer over medium heat. Add the cinnamon sticks, crushed cardamom pods, and ground nutmeg to the milk. Let it infuse for a few minutes to develop the flavors.
  • While the milk is simmering, rinse the sago pearls in cold water to remove excess starch.
  • In a separate small pot, bring water to a boil and add the rinsed sago pearls. Cook the sago pearls for about 10-15 minutes or until they become translucent. Stir occasionally to prevent sticking. Drain the cooked sago pearls and set them aside.
  • In the same pot used for boiling the sago pearls, cook the vermicelli noodles according to the package instructions. Once cooked, drain the vermicelli noodles and set them aside.
  • Return to the pot of simmering milk. Add the cooked sago pearls and vermicelli noodles to the milk. Stir well and let it simmer for another 10-15 minutes, allowing the flavors to meld together.
  • Add sugar to the milk mixture and continue stirring until the sugar dissolves. Taste the Boeber and adjust the sweetness to your liking.
  • If using, stir in the rose water or almond essence for extra fragrance.
  • Lastly, add the butter or ghee to the Boeber and stir until it melts, giving the dessert a rich and velvety texture.
  • Remove the pot from the heat and let the Boeber cool slightly before serving.
  • Garnish the Boeber with slivered almonds and/or pistachios, if desired.
