Ingredients
  

  • beans
  • onion

Instructions
 

  • Rinse and soak the mixed beans overnight or according to the package instructions.Drain the soaked beans and cook them in a pot of water until they are tender. This can take about 30-45 minutes, depending on the beans used. Once cooked, drain any excess water and set the beans aside.
  • In a large skillet or saucepan, heat the cooking oil over medium heat.
  • Add the cumin seeds and let them sizzle for a few seconds until they release their aroma.
  • Add the finely chopped onions and sauté until they turn translucent.
  • Stir in the minced garlic, grated ginger, and chopped green chilies. Sauté for a couple of minutes until the raw smell disappears.
  • Add the ground coriander, ground cumin, turmeric powder, red chili powder, and salt. Mix well to coat the onions with the spices.
  • Add the finely chopped tomatoes to the skillet and cook until they become soft and start to break down, forming a thick sauce.
  • Lower the heat and add the cooked beans to the skillet. Mix everything together to combine the beans with the curry base.
  • If the curry seems too thick, add some water to achieve the desired consistency. Simmer the beans curry for a few more minutes, allowing the flavors to meld together.
  • For a creamier texture, add coconut milk or heavy cream to the curry. Stir well and let it simmer for a couple of minutes to incorporate the creaminess.
  • Sprinkle garam masala or curry powder over the beans curry, giving it a final burst of flavor.
  • Garnish the beans curry with fresh cilantro (coriander) leaves.Serve the flavorful beans curry hot with steamed rice, naan, or your favorite bread for a wholesome and satisfying meal.
