Ingredients
  

  • rice
  • chicken
  • ghee
  • onion
  • garlic
  • ginger
  • curry powder
  • coriander
  • garam masala
  • salt and pepper
  • cumin seed
  • cumin powder
  • chili powder
  • turmeric
  • whole spice
  • dried fruits
  • fresh cilantro
  • hot water
  • saffron threads

Instructions
 

  • In a large heavy-bottomed pot, heat the ghee or vegetable oil over medium heat.Add the sliced onions and sauté until they turn golden brown.
  • Stir in the minced garlic, grated ginger, and slit green chilies. Sauté for a minute until the raw aroma disappears.
  • Toss in the whole spices (green cardamom pods, cinnamon stick, cloves, and bay leaf) along with the cumin seeds. Sauté for another minute until they release their aroma.
  • Mix in the ground cumin, ground coriander, ground turmeric, ground chili powder, garam masala, and salt. Stir well to coat the onions and spices evenly.
  • Add the meat pieces to the pot and cook until they are lightly browned on all sides.
  • Drain the soaked basmati rice and add it to the pot. Gently stir to coat the rice with the spices and meat.
  • Pour in the hot water or chicken/beef broth. If using saffron, add the soaked saffron and milk mixture for a beautiful golden color and aroma.
  • Bring the mixture to a boil, then reduce the heat to low. Cover the pot with a tight-fitting lid and let the Akni simmer for about 25-30 minutes or until the rice and meat are fully cooked and tender.
  • If using dried fruits, drain them from the soaking water and add them to the Akni during the last 5 minutes of cooking. They will add a delightful sweetness and texture to the dish.
  • Once the Akni is fully cooked, fluff the rice gently with a fork.Garnish with chopped fresh cilantro (coriander leaves) for a burst of color and freshness.
  • Serve the aromatic Akni hot and enjoy the harmonious blend of flavors.
