Instructions
- In a large heavy-bottomed pot, heat the ghee or vegetable oil over medium heat.Add the sliced onions and sauté until they turn golden brown.
- Stir in the minced garlic, grated ginger, and slit green chilies. Sauté for a minute until the raw aroma disappears.
- Toss in the whole spices (green cardamom pods, cinnamon stick, cloves, and bay leaf) along with the cumin seeds. Sauté for another minute until they release their aroma.
- Mix in the ground cumin, ground coriander, ground turmeric, ground chili powder, garam masala, and salt. Stir well to coat the onions and spices evenly.
- Add the meat pieces to the pot and cook until they are lightly browned on all sides.
- Drain the soaked basmati rice and add it to the pot. Gently stir to coat the rice with the spices and meat.
- Pour in the hot water or chicken/beef broth. If using saffron, add the soaked saffron and milk mixture for a beautiful golden color and aroma.
- Bring the mixture to a boil, then reduce the heat to low. Cover the pot with a tight-fitting lid and let the Akni simmer for about 25-30 minutes or until the rice and meat are fully cooked and tender.
