Instructions
 

  • If using pre-ground pork, skip to the next step. If grinding pork at home, ensure the pork is well-chilled and run it through a meat grinder fitted with a medium-coarse grinding plate.
  • In a mixing bowl, combine the ground pork with salt, black pepper, ground sage, dried thyme, ground nutmeg, ground mace or allspice, and cayenne pepper (if using).
  • Mix the seasonings thoroughly into the pork, ensuring an even distribution of flavors.
  • Soak the natural sausage casings in water according to the package instructions to soften them.
  • Using a sausage stuffer, carefully fill the casings with the seasoned pork mixture, leaving enough space to twist into individual links.
  • If using pre-made sausage links, skip to the next step. If stuffing sausages at home, twist the filled casings at regular intervals to create individual sausages.
  • Heat a frying pan or grill over medium heat and add a small amount of oil.Cook the sausages in batches, turning them occasionally, until they are browned and cooked through. It will take about 15-20 minutes, depending on the thickness of the sausages.
  • Once cooked, serve the Pork Bangers hot as a delightful breakfast option alongside eggs, bacon, or beans. They also pair well with mashed potatoes, onion gravy, or as a flavorful addition to various dishes.
