Homemade Raffaello Chocolate

Ingredients
  

  • coconut
  • almonds
  • condensed milk
  • almond extract
  • whole almonds
  • chocolate
  • coconut oil

Instructions
 

  • In a mixing bowl, combine the desiccated coconut, ground almonds, sweetened condensed milk, and almond extract. Mix until well combined and the mixture holds its shape when pressed together.
  • Take a small amount of the filling mixture and flatten it in your palm.Optionally, place a whole almond in the center and wrap the filling around it, forming a ball. Seal the edges to completely cover the almond.
  • Place the formed chocolates on a parchment paper-lined baking tray or plate.
  • Chill the chocolates in the refrigerator for about 20-30 minutes to firm them up.
  • In a double boiler or microwave-safe bowl, melt the white chocolate until smooth. If desired, add coconut oil to create a smoother consistency.
  • Using a fork or dipping tools, dip each chilled chocolate into the melted white chocolate, coating it evenly.
  • Let any excess chocolate drip off before placing the coated chocolate back on the parchment paper.
  • While the white chocolate is still wet, sprinkle desiccated coconut or coconut flakes over the top of each chocolate to decorate.
  • Let the coated chocolates set at room temperature or place them in the refrigerator to speed up the process. Once the chocolate is fully set, the Raffaello chocolates are ready to be enjoyed.
  • Serve the homemade Raffaello chocolates in a decorative box or plate, or package them beautifully for gifting.
