Instructions
- Rinse the dried samp thoroughly in a strainer or colander. If needed, soak the samp in water overnight or for at least 8 hours to reduce the cooking time. Drain the soaked samp before cooking.
- In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Add the beef stew meat and brown it on all sides. This will help to develop rich flavors in the stew. Once the beef is browned, remove it from the pot and set it aside.
- In the same pot, add the chopped onion and minced garlic. Sauté until the onion becomes translucent and aromatic.
- Stir in the diced carrots and potatoes, and cook for a few minutes until they begin to soften.
