Ingredients
  

  • dried samp
  • beef stew meat
  • vegetable oil
  • onion, finely chopped
  • garlic
  • carrot
  • potatoes
  • veegtable broth
  • cumin
  • coriander
  • paprika
  • fresh parsley
  • chili powder
  • salt and pepper

Instructions
 

  • Rinse the dried samp thoroughly in a strainer or colander. If needed, soak the samp in water overnight or for at least 8 hours to reduce the cooking time. Drain the soaked samp before cooking.
  • In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Add the beef stew meat and brown it on all sides. This will help to develop rich flavors in the stew. Once the beef is browned, remove it from the pot and set it aside.
  • In the same pot, add the chopped onion and minced garlic. Sauté until the onion becomes translucent and aromatic.
  • Stir in the diced carrots and potatoes, and cook for a few minutes until they begin to soften.
  • Add the diced tomatoes, ground cumin, ground coriander, paprika, and chili powder (if using). Mix well to coat the vegetables with the spices.
  • Return the browned beef to the pot, along with any accumulated juices. Pour in the beef or vegetable broth, making sure the meat and vegetables are fully covered.
  • Add the soaked and drained samp to the pot. Bring the mixture to a boil.
  • Reduce the heat to low, cover the pot, and let the stew simmer for 1 hour 30 minutes to 2 hours or until the beef and samp are tender. Stir occasionally to prevent sticking, and add more broth or water if needed to maintain the desired consistency.
  • Season the stew with salt and pepper to taste. Adjust the seasoning as needed.
  • Before serving, sprinkle chopped fresh parsley or cilantro on top for a burst of freshness.
