Ingredients
- pork shoulder
- kosher salt
- ground white pepper
- ground coriander
- ground mace
- ground nutmeg
- garlic powder
- onion powder
- sausage casings

Instructions
- If you're using whole pork shoulder, cut it into small pieces to fit into the meat grinder. Make sure the meat is well-chilled before grinding.
- Grind the pork shoulder (and beef, if using) through a meat grinder with a fine grinding plate. Alternatively, use pre-ground meat.
- In a large bowl, combine the minced meat with ice-cold water, kosher salt, ground white pepper, ground coriander, ground mace, ground nutmeg, garlic powder, and onion powder. Mix thoroughly until all the ingredients are evenly distributed.
- If using natural sausage casings, carefully slide them onto the sausage stuffer tube or the nozzle of a piping bag (without a tip).
- Fill the sausage stuffer or piping bag with the seasoned meat mixture. Carefully push the mixture through the tube, allowing it to fill the casing. Leave some space at the end to tie a knot or twist the sausage into links.
- Once the sausages are filled, twist them at regular intervals to form individual links. Alternatively, leave them in one long continuous rope.
- If you prefer, you can cook the Frankfurt Sausages on a grill or stovetop. Heat a frying pan over medium heat with a small amount of cooking oil. Fry the sausages until they are cooked through and golden brown on all sides.
- Once cooked, serve the Frankfurt Sausages hot with your favorite condiments, such as mustard, ketchup, sauerkraut, or onions. Enjoy them on a bun or as a standalone treat.
