Equipment

  • frying pan
  • tongs
  • paper towel

Ingredients

  • pangasius fish fillets
  • all-purpose flour
  • eggs
  • breadcrumbs
  • salt
  • black pepper
  • paprika
  • Vegetable oil

Instructions

  • Pat the pangasius fish fillets dry with paper towels to remove any excess moisture. This will help the coating adhere better to the fish.
  • Prepare three shallow dishes. In the first dish, place the all-purpose flour. In the second dish, beat the eggs until well mixed. In the third dish, combine the breadcrumbs, salt, black pepper, and paprika (if using). Mix the breadcrumb mixture thoroughly.
  • One at a time, coat each pangasius fillet in the flour, shaking off any excess. Then dip it into the beaten eggs, ensuring it is fully coated. Finally, place the fillet in the breadcrumb mixture, pressing gently to adhere the breadcrumbs to the fish. Coat the fillet evenly on all sides. Repeat this process for all the fillets.
  • In a frying pan or skillet, add enough vegetable oil to cover the bottom of the pan to a depth of about 1/2 inch. Heat the oil over medium-high heat until it reaches around 350°F (175°C). To check if the oil is ready for frying, drop a breadcrumb into the oil; it should sizzle and float to the surface.
  • Gently place the breaded pangasius fillets into the hot oil, taking care not to overcrowd the pan (you may need to fry in batches).
  • Fry the fillets for about 3-4 minutes on each side, or until they turn golden brown and crispy. Use tongs or a spatula to flip the fillets gently.
  • Once the pangasius fillets are cooked to perfection, remove them from the oil and place them on paper towels or a wire rack to drain any excess oil.
  • Fried pangasius fish is best enjoyed immediately while it's hot and crispy. Serve it with your favorite side dishes, such as steamed vegetables, rice, or a fresh salad. You can also add a squeeze of lemon or a dipping sauce of your choice for an extra burst of flavor.
