Ingredients

  • 1 whole free-range chicken (about 2-3 kg)

  • 2 tablespoons vegetable oil

  • 1 large onion, finely chopped

  • 2-3 cloves of garlic, minced

  • 2-3 ripe tomatoes, chopped

  • 2 tablespoons tomato paste

  • 2 teaspoons ground coriander

  • 2 teaspoons ground cumin

  • 1 teaspoon ground paprika

  • 1 teaspoon ground turmeric

  • 1-2 teaspoons chili powder (adjust according to your spice preference)

  • Salt and black pepper to taste

  • 2 cups chicken broth or water

  • Fresh cilantro or parsley for garnish

Instructions

  • Clean the chicken thoroughly and cut it into pieces. If the chicken is too large, you can also leave it whole or cut it into manageable portions.
  • In a large pot or Dutch oven, heat the vegetable oil over medium heat. Add the chopped onion and sauté until it becomes translucent.
  • Stir in the minced garlic and cook for another minute until the garlic releases its aroma.
  • Add the chopped tomatoes and tomato paste to the pot, stirring well to combine with the onions and garlic. Cook for a few minutes until the tomatoes start to break down.
  • Mix in the ground coriander, cumin, paprika, turmeric, and chili powder. Season with salt and black pepper according to your taste preferences.
  • Place the chicken pieces into the pot, coating them with the spice mixture. Allow the chicken to brown slightly on all sides.
  • Pour in the chicken broth or water, ensuring that the chicken is mostly covered. Bring the mixture to a boil.
  • Pour in the chicken broth or water, ensuring that the chicken is mostly covered. Bring the mixture to a boil.
  • If the liquid reduces too much during cooking, you can add a little more water or broth to maintain the desired consistency of the sauce.
  • Once the chicken is cooked and the flavors have melded together, check the seasoning and adjust with more salt and pepper if needed.
  • Serve hot, garnished with fresh cilantro or parsley. This dish is typically enjoyed with steamed rice or your choice of side dishes.
