Equipment

  • pie dish
  • food processor
  • mixing bowl
  • whisk

Ingredients

  • digestive biscuits
  • unsalted butter
  • sweetened condensed milk
  • heavy cream
  • lemon juice
  • vanilla extract
  • fresh fruits
  • grated chocolate

Instructions

  • Crush the digestive biscuits or graham crackers into fine crumbs. You can use a food processor or place them in a zip-lock bag and crush them with a rolling pin.
  • In a mixing bowl, combine the biscuit crumbs with the melted unsalted butter until the mixture resembles wet sand.
  • Press the biscuit mixture firmly into the bottom and sides of a 9-inch tart or pie dish to create an even and compact base. Use the back of a spoon to smooth it out.
  • In a separate mixing bowl, pour the sweetened condensed milk, heavy cream, fresh lemon juice, lemon zest (if using), and vanilla extract.
  • Use an electric mixer or whisk to beat the ingredients together until the mixture thickens and becomes smooth and creamy.
  • Pour the filling onto the prepared biscuit base in the tart dish, spreading it out evenly.
Cover the tart with plastic wrap or a lid and place it in the refrigerator to chill for at least 4 hours or preferably overnight. This will allow the tart to set and develop its flavors.
  • Before serving, decorate the chilled fridge tart with fresh fruits of your choice. You can arrange sliced kiwi, berries, or peaches on top for a colorful and refreshing touch.
  • For an added touch of indulgence, sprinkle grated chocolate or a dusting of cocoa powder over the top of the tart.
