Equipment
- large pot
- mixing bowl
- paper towel
- slotted spoon
Ingredients
- chicken wings
- all purpose flour
- thyme
- oregano
- salt
- black pepper
- vegetable oil
- mayonnaise
- dijon mustard
- honey
- hot sauce
Instructions
- Preheat your deep fryer or a large pot with vegetable oil to 180°C (350°F).
- In a mixing bowl, combine the flour, paprika, garlic powder, onion powder, dried thyme, dried oregano, salt, and black pepper. Mix well to evenly distribute the spices.
- Pat the chicken wings dry with a paper towel to remove excess moisture. This will help the coating adhere better.
- Place the chicken wings into the bowl with the flour mixture and toss to coat them thoroughly. Press the flour mixture onto the wings to ensure an even coating.
- Carefully lower the coated wings into the preheated oil, making sure not to overcrowd the pot. Fry the wings in batches for about 10-12 minutes or until they are golden brown and crispy. Adjust the cooking time as needed, depending on the size of the wings.
- While the wings are frying, prepare the dunking sauce. In a separate bowl, combine the mayonnaise, dijon mustard, honey, hot sauce (if using), salt, and pepper. Mix well until all the ingredients are incorporated. Taste and adjust the seasonings according to your preference.
- Once the wings are cooked, remove them from the oil using a slotted spoon or tongs and place them on a paper towel-lined plate to drain any excess oil.
- Serve the crispy wings immediately with the prepared dunking sauce on the side.

Notes
You can adjust the level of spiciness by adding more or less hot sauce to the dunking sauce.
If you don't have a deep fryer, you can also fry the wings in a large skillet with enough vegetable oil to submerge them halfway. Flip the wings halfway through the cooking process for even browning.
For an extra crispy coating, you can double-dip the wings by dipping them back into the flour mixture after the first frying and then frying them again for a few more minutes.
Remember to exercise caution when working with hot oil and always follow safety guidelines.
