Ingredients
- yellow split lentils
- water
- cumin
- onion

Instructions
- Rinse the yellow split lentils thoroughly under cold water and soak them in water for 30 minutes. This will help them cook faster.
- In a medium-sized saucepan, bring 3 cups of water to a boil. Add the soaked lentils and cook them over medium heat until they become tender and soft, stirring occasionally. This will take about 15-20 minutes. Skim off any foam that rises to the surface during cooking.
- While the lentils are cooking, heat vegetable oil or ghee in a separate pan over medium heat. Add cumin seeds and let them sizzle until they release their aroma.
- Add the finely chopped onions to the pan and sauté them until they become translucent and lightly browned.
- Stir in the minced garlic, grated ginger, and finely chopped green chili. Sauté for another minute until the spices become fragrant.
- Add the chopped tomatoes to the pan and cook them until they soften and release their juices.
- Lower the heat and add ground turmeric, ground cumin, ground coriander, chili powder, and salt to the pan. Mix well and cook the spices for a couple of minutes.
- Once the lentils are fully cooked, add the prepared spice mixture to the saucepan with lentils. Mix everything together, allowing the flavors to blend.
- If the dhal seems too thick, you can add a bit of water to achieve your desired consistency. Let the dhal simmer for a few more minutes.
- Garnish the dhal with freshly chopped cilantro leaves.
