Ingredients
  

  • basmati rice
  • chicken or meat
  • onions
  • garlic
  • tomatoes
  • garam masala
  • coriander
  • cumin
  • salt and pepper
  • fresh parsley
  • vegetable oil
  • yogurt

Instructions
 

  • Rinse the basmati rice in cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain using a strainer.
  • Heat the ghee or vegetable oil in a large pot over medium heat. Add the sliced onions and sauté until they turn golden brown and caramelized. Remove half of the onions and set them aside for garnishing.
  • In the same pot, add the ginger-garlic paste and sauté for a minute until fragrant. Add the chopped tomatoes and cook until they soften.
  • Add the chicken or meat to the pot and cook until it is lightly browned. If using vegetables, add them at this stage and sauté until they are slightly tender.
  • In a mixing bowl, whisk together the yogurt, turmeric powder, red chili powder, cumin powder, coriander powder, garam masala, and salt. Pour this mixture into the pot and stir well to coat the meat or vegetables.
  • Add the soaked and drained basmati rice to the pot, followed by enough water to cover the rice by about an inch. Stir gently to combine everything.
  • Place the whole spices (cinnamon sticks, cloves, green cardamom pods, bay leaves) on top of the rice. Cover the pot with a lid and cook on low heat for about 20-25 minutes, or until the rice and meat or vegetables are fully cooked and tender.
  • Once cooked, remove the pot from the heat and let it rest for 5-10 minutes. Fluff the rice gently with a fork to separate the grains.
  • Garnish the biryani with the reserved caramelized onions and chopped cilantro leaves.
  • Serve the biryani hot with raita (yogurt sauce) and enjoy the flavors and aromas of this classic dish.
