Ingredients
  

  • samp
  • butter
  • onion

Instructions
 

  • Drain the soaked samp and rinse it thoroughly under cold water
  • In a large pot, add the rinsed samp and enough water to cover it by about 2 inches. Bring the water to a boil over medium-high heat, then reduce the heat to low and cover the pot with a lid. Allow the samp to simmer gently for about 1.5 to 2 hours, or until it becomes tender and creamy. Stir occasionally to prevent sticking to the bottom of the pot.
  • In a separate skillet or frying pan, melt the butter over medium heat. Add the chopped onion and minced garlic, and sauté until they become translucent and fragrant.
  • Add the ground cumin, ground coriander, paprika, salt, and pepper to the skillet. Stir well to combine the spices with the onions and garlic. Cook for an additional minute to release the flavors.
  • Pour the heavy cream into the skillet and stir to combine with the spices. Bring the mixture to a gentle simmer and cook for about 5 minutes, allowing the flavors to meld together and the sauce to thicken slightly.
  • Once the samp is cooked and tender, drain any excess water if necessary. Add the creamy sauce from the skillet to the pot with the cooked samp. Stir well to coat the samp with the creamy sauce. Adjust the seasoning if needed.
