Ingredients
  

  • vegetables
  • onion
  • garlic
  • vegetable oil
  • vinegar

  • mustard seeds
  • turmeric powder
  • chili flakes

Instructions
 

  • In a mixing bowl, combine the chopped or grated vegetables, sliced onion, minced garlic, and grated ginger. Mix well to combine.
  • Heat the vegetable oil in a pan over medium heat. Add the mustard seeds and cook until they start to splutter.
  • Add the turmeric powder and chili flakes or chili powder to the pan. Stir briefly to toast the spices and release their flavors.
  • Pour the spiced oil mixture over the vegetables in the mixing bowl. Add the vinegar, sugar, and salt. Mix well to ensure all the vegetables are coated with the spices and seasonings.
  • Transfer the mixture into sterilized jars, pressing it down gently to remove any air pockets. Make sure the vegetables are fully submerged in the liquid.
  • Close the jars tightly with their lids and store them in a cool, dry place for 2-3 days to allow the flavors to develop and the vegetables to pickle.
