Equipment

  • mixing bowl
  • pastry cutter
  • whisk
  • baking sheet
  • pastry brush
  • rolling pin
  • cookie cutter
  • cooling rack

Ingredients

  • all purpose flour
  • baking powder
  • salt
  • granulated sugar
  • unsalted butter
  • amasi
  • vanilla extract
  • large egg

Instructions

  • Preheat your oven to 220°C (425°F) and line a baking sheet with parchment paper.
In a mixing bowl, whisk together the all-purpose flour, baking powder, salt, and granulated sugar until well combined.
  • Add the cold cubed butter to the dry ingredients. Use a pastry cutter or fork to cut the butter into the flour mixture until it resembles coarse crumbs.
  • Create a well in the center of the mixture and pour in the amasi and vanilla extract. Stir the ingredients together with a wooden spoon or spatula until just combined. Be careful not to overmix, as this can make the scones dense.
  • Transfer the dough onto a lightly floured surface. Gently knead the dough a few times until it comes together. If the dough feels sticky, lightly dust it with more flour.
  • Roll out the dough to a thickness of about 2.5 cm (1 inch). Use a round cookie cutter or a sharp knife to cut out scones from the dough. Place the scones onto the prepared baking sheet, leaving a little space between each.
  • Brush the tops of the scones with beaten egg wash using a pastry brush. This will give the scones a lovely golden color when baked.
  • Bake the scones in the preheated oven for 12-15 minutes, or until they are lightly golden on top and cooked through. You can test for doneness by inserting a toothpick into the center of a scone – it should come out clean.
  • Once baked, remove the scones from the oven and transfer them to a cooling rack to cool slightly.
  • Serve the amasi scones warm or at room temperature. Enjoy them as they are or with your favorite spreads such as butter, jam, or clotted cream.
